Ризотто с луком-пореем, грибами и пармезаном
- сливочное масло - 25г
- оливковое масло - 1 ст.л.
- лук-порей - 1 шт.
- чеснок - 1 зубчик
- рис (смесь дикого и бурого) - 300г
- овощной бульон - 1 л
- шампиньоны - 250г
- пармезан или любой твердый сыр - 100г
В глубокой сковороде разогреть сливочное и оливковое масло, потушить раздавленный чеснок и порезанный порей на среднем огне 5 минут. К горячему порею добавить рис, 850 мл бульона, перемешать и приправить солью и перцем, тушить на слабом огне 10 минут.
Добавить грибы, размешать и готовить еще 10 минут. Снять ризотто с огня, вмешать оставшийся бульон, половину пармезана и дать ему постоять 5 минут. Подавать с зеленым салатом, посыпав оставшимся пармезаном.
